Step-by-Step Instructions
  1. Preheat your oven to 180°C (360°F).
  2. Prick each sweet potato several times with a fork and roast in the oven for about 60 minutes until soft.
  3. Allow the sweet potatoes to cool for 10 minutes, then peel and mash in a bowl. Mix in 180g of flour until a smooth dough forms.
  4. On a floured surface, roll the dough into thick ropes and cut into small squares. Use a fork to create ridges on each piece.
  5. Boil a large pot of salted water and cook the gnocchi for 2-3 minutes, until they float to the surface.
  6. Remove the gnocchi with a slotted spoon, drain on a paper towel-lined plate, and serve with a sauce of your choice.
