Ingredients
  

For the Bars
  • 2 large Eggs can substitute with flax eggs for vegan option
  • 1 cup Brown Sugar can substitute with coconut sugar
  • 1/2 cup Oil can use melted coconut oil
  • 1/4 cup Honey maple syrup can be a vegan alternative
  • 1 teaspoon Vanilla Extract
  • 1 cup Carrots (grated) fresh is best
  • 1 cup Zucchini (grated) medium size preferred
  • 1/2 cup Walnuts (chopped) substitute with pecans or omit for nut-free
  • 1 cup All-Purpose Flour gluten-free flour blend can be used
  • 1 teaspoon Baking Powder ensure it’s fresh
  • 1 teaspoon Ground Ginger can substitute with ground cinnamon
  • 1/2 teaspoon Baking Soda can be omitted if using self-rising flour
For the Frosting
  • 1/4 cup Lemon Juice & Zest must be fresh
  • 8 oz Cream Cheese vegan cream cheese is an alternative

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C). Prepare a 13x9x2-inch baking pan, preferably ungreased.
  2. In a large mixing bowl, whisk together the eggs, brown sugar, oil, honey, and vanilla extract until smooth.
  3. Gently fold in the grated carrots, zucchini, and chopped walnuts into the wet mixture.
  4. In a separate bowl, mix together the all-purpose flour, baking powder, ground ginger, and baking soda.
  5. Gradually add the dry ingredients into the wet mixture, stirring gently until just combined.
  6. Pour the batter into the prepared baking pan and bake for about 25 minutes.
  7. Remove from oven and let cool in the pan on a wire rack for at least 1 hour.
  8. While cooling, prepare the frosting by beating together the cream cheese, fresh lemon juice, and lemon zest.
  9. Spread the lemon cream cheese frosting evenly over the cooled bars.
  10. Cut into squares and serve.

Notes

Allow bars to cool completely before frosting to maintain texture. For an extra kick, add nutmeg to the ginger.
