- Preheat your oven to 350°F (175°C). Prepare a 13x9x2-inch baking pan, preferably ungreased.
- In a large mixing bowl, whisk together the eggs, brown sugar, oil, honey, and vanilla extract until smooth.
- Gently fold in the grated carrots, zucchini, and chopped walnuts into the wet mixture.
- In a separate bowl, mix together the all-purpose flour, baking powder, ground ginger, and baking soda.
- Gradually add the dry ingredients into the wet mixture, stirring gently until just combined.
- Pour the batter into the prepared baking pan and bake for about 25 minutes.
- Remove from oven and let cool in the pan on a wire rack for at least 1 hour.
- While cooling, prepare the frosting by beating together the cream cheese, fresh lemon juice, and lemon zest.
- Spread the lemon cream cheese frosting evenly over the cooled bars.
- Cut into squares and serve.
