  • 1 28 oz can crushed tomatoes Can use fresh tomatoes

Cooking Steps
  1. Heat 2 tablespoons of olive oil in a deep skillet over medium heat for about 2 minutes.
  2. Add 1 diced red bell pepper and 1 chopped onion to the skillet. Sauté for 3 to 4 minutes until softened.
  3. Stir in 3 minced garlic cloves, 1 teaspoon ground cumin, 1 teaspoon smoked paprika, and a pinch of cayenne pepper. Cook for about 30 seconds.
  4. Pour in 1 can (28 oz) of crushed tomatoes, stir well and bring to a gentle boil. Reduce heat and let simmer for about 10 minutes.
  5. Crack 4 large eggs into small bowls and gently slide into the sauce. Cover the skillet and cook for 5 to 10 minutes.
  6. Sprinkle with crumbled feta cheese and fresh herbs before serving.
