Ingredients
  

For the Base
  • 2 cups Rolled Oats or gluten-free oats
  • 1 cup Medjool Dates pitted and fresh
  • 1 cup Shelled Pistachios can substitute any nut or seed
  • 1 cup Dried Cranberries use unsweetened for healthier bars
For the Binding
  • 1/4 cup Chia Seeds essential for texture
  • 1/4 cup Honey or Maple Syrup maple syrup for vegan option
  • 1/2 cup Almond Butter or other nut/seed butter
  • 1 teaspoon Vanilla Extract optional but recommended
To Finish
  • 1 pinch Salt to balance sweetness

Method
 

Instructions
  1. In a food processor, pulse the rolled oats until they resemble a coarse flour, about 30 seconds.
  2. Add the Medjool dates, shelled pistachios, almond butter, honey or maple syrup, vanilla extract, chia seeds, and a pinch of salt into the processor. Blend for 1 to 2 minutes until the mixture is sticky.
  3. Gently add the dried cranberries and pulse a few times to combine.
  4. Line an 8x8-inch baking pan with parchment paper and transfer the mixture, pressing it down firmly.
  5. Refrigerate the packed mixture for 1 to 2 hours to set.
  6. Lift the bars out of the pan using the parchment paper and slice onto a cutting board.
  7. Optionally, drizzle with melted dark chocolate or top with extra chopped pistachios.
  8. Keep in an airtight container in the refrigerator for up to 10 days.

Notes
