  • 2 tablespoons passionfruit powder or fresh passionfruit puree

For the Creaminess
  • 0.5 cups sweetened coconut milk or unsweetened for less sugar

Method
 

Step-by-Step Instructions
  1. In a medium saucepan, mix together 2 cups of water, 1 cup of white grape juice, and 1 cup of sliced fresh strawberries. Sprinkle in ½ cup of granulated sugar and stir well. Place over medium heat until sugar dissolves, about 5 minutes.
  2. Allow the mixture to simmer gently for 10 minutes. Remove from heat, strain the liquid into a bowl pressing on the strawberries to extract juice, and discard solids.
  3. Return the strained liquid to the saucepan and whisk in ¼ cup of lemon juice, 2 tablespoons of acai powder, 2 tablespoons of passionfruit powder, and 1 teaspoon of citric acid until dissolved.
  4. Remove from heat, transfer to a jar, and let cool for 15-20 minutes.
  5. In a cocktail shaker, mix ½ cup of the base with ½ cup of sweetened coconut milk. Shake well until blended.
  6. Fill a tall glass with ice and pour the Pink Drink over the ice, garnishing with strawberry slices.
