  • 1 pound lean ground beef or ground turkey or thinly sliced chicken
  • 2 tablespoons butter or olive oil for a dairy-free version
  • 1 medium yellow onion or red onion for a milder taste
  • 1 medium green bell pepper or red/yellow for a sweeter flavor
  • 1/4 cup ketchup or barbecue sauce for a smoky flavor
  • 1 tablespoon Worcestershire sauce or soy sauce as a substitute
  • 1 teaspoon kosher salt or use less table salt

  • 1 cup shredded cheddar cheese or provolone or mozzarella

  • 12 pieces jumbo pasta shells or manicotti/cannelloni if needed
  • 1 tablespoon cornstarch or all-purpose flour
  • 1/2 cup milk or non-dairy milk for dairy-free option
  • 1 cup beef broth or chicken broth

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and gather all ingredients and equipment.
  2. In a large skillet over medium heat, brown 1 pound of lean ground beef for about 5-7 minutes.
  3. Melt 2 tablespoons of butter in the same skillet and sauté diced yellow onion and green bell pepper for about 4 minutes.
  4. Return the browned ground beef to the skillet, stir in 1/4 cup ketchup, 1 tablespoon Worcestershire sauce, 1 teaspoon kosher salt, and black pepper.
  5. Remove from heat and mix in 1 cup of shredded cheddar cheese until melted.
  6. In the same skillet, combine 1 cup of beef broth, 1/2 cup of milk, and 1 tablespoon of cornstarch, whisk until smooth.
  7. Spoon the beef and vegetable mixture into each cooked jumbo pasta shell and place in a greased baking dish.
  8. Drizzle half of the cheesy sauce over the stuffed shells and bake for 10 minutes.
  9. Remove from oven, drizzle remaining cheese sauce over each stuffed shell, and serve warm.
