Lasagna Layers

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Sauté diced onion and chopped red bell pepper for about 5 minutes.
  3. Add ground beef or turkey to the skillet, cooking for 7-10 minutes until fully cooked.
  4. Stir in taco seasoning and water, simmer on low for 5 minutes.
  5. Fold in drained black beans and corn kernels, cooking for an additional 2-3 minutes.
  6. Spread a layer of salsa in a greased baking dish.
  7. Layer corn tortillas, a third of the meat mixture, and shredded cheese. Repeat for two more layers.
  8. Top with remaining salsa and shredded cheese, cover with foil, and bake for 25 minutes.
  9. Remove foil and bake for an additional 15 minutes.
  10. Let it cool for 10 minutes before serving and garnish with cilantro.
