Preparation
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Sauté diced onion and chopped red bell pepper for about 5 minutes.
- Add ground beef or turkey to the skillet, cooking for 7-10 minutes until fully cooked.
- Stir in taco seasoning and water, simmer on low for 5 minutes.
- Fold in drained black beans and corn kernels, cooking for an additional 2-3 minutes.
- Spread a layer of salsa in a greased baking dish.
- Layer corn tortillas, a third of the meat mixture, and shredded cheese. Repeat for two more layers.
- Top with remaining salsa and shredded cheese, cover with foil, and bake for 25 minutes.
- Remove foil and bake for an additional 15 minutes.
- Let it cool for 10 minutes before serving and garnish with cilantro.
