For Seasoning
  • 1 tsp Salt
  • 1/2 tsp Black Pepper freshly ground
  • 1/2 tsp Red Pepper Flakes adjust to taste
For the Greens and Eggs
  • 4 cups Spinach fresh
  • 1 tbsp Lemon Zest fresh
  • 6 large Eggs bring to room temperature
For Garnish (Optional)
  • 1/4 cup Fresh Basil can substitute with parsley

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Prepare your vegetables: dice the red bell pepper, slice the red onion, mince the garlic, and halve the tomatoes.
  3. Mix together the oregano, thyme, salt, black pepper, and red pepper flakes in a small bowl.
  4. In an oven-safe dish, evenly distribute diced red bell pepper, sliced red onion, minced garlic, and halved tomatoes.
  5. Crumble feta cheese over the vegetable mix, drizzle with olive oil, and sprinkle with the spice mix.
  6. Bake for about 25 minutes until veggies soften and feta turns creamy.
  7. Stir the mixture and add the fresh spinach, mixing until wilted.
  8. Create small wells in the mixture using a spoon and crack the eggs into the wells.
  9. Return to the oven and bake for an additional 8 to 10 minutes until egg whites are set.
  10. Allow to rest for 2 minutes, then sprinkle with lemon zest and garnish with basil before serving.
