- In a large mixing bowl, combine the chicken thighs, vegetable oil, Parmesan cheese, lemon juice, honey, soy sauce, Dijon mustard, minced garlic, smoked paprika, crushed red pepper, oregano, salt, and pepper. Mix well and refrigerate for at least 1 hour.
- After marinating, thread 5-6 pieces of marinated chicken onto each soaked skewer in a single layer.
- Preheat your air fryer to 400°F (200°C) and cook the chicken skewers for 11-12 minutes, flipping halfway through until cooked to an internal temperature of 165°F (74°C).
- Melt butter in a skillet over medium-low heat, add minced garlic, and sauté briefly. Stir in honey, Parmesan cheese, and parsley.
- Brush the cooked skewers with the honey garlic butter and serve warm.
