Step‑by‑Step Instructions
  1. In a small mixing bowl, whisk together mayonnaise, red wine vinegar, minced garlic, your choice of sweetener, Italian seasoning, red pepper flakes, salt, and pepper. Let the dressing sit for 5 minutes.
  2. While the dressing is resting, slice the ham, salami, and pepperoni into ¼-inch pieces and cube the provolone cheese. Shred the iceberg lettuce.
  3. In a large salad bowl, layer the shredded lettuce followed by the sliced deli meats, pepperoncini, diced onion, and halved grape tomatoes. Gently fold in the cubed provolone cheese.
  4. Drizzle the prepared dressing over the salad mixture and toss everything together thoroughly.
