Ingredients
  

For the Meatballs
  • 1 pound Ground Beef or substitute with turkey, chicken, or lamb
  • 2 cloves Garlic minced
  • 1 medium Onion finely chopped
  • 1 cup Breadcrumbs gluten-free if desired
  • 1 teaspoon Baking Soda for tender meatballs
  • 1/4 cup Fresh Herbs (Parsley, Mint, Coriander) chopped
  • 2 tablespoons Olive Oil for moisture
  • to taste Salt & Black Pepper for seasoning
For the Roasted Potatoes
  • 4 medium Potatoes cut into wedges
  • 2 tablespoons Olive Oil for roasting
For the Tzatziki Sauce
  • 1 medium Cucumber grated
  • 1 cup Thick Greek Yogurt or dairy-free alternative
  • 2 tablespoons Lemon Juice freshly squeezed
  • 2 tablespoons Fresh Dill or Mint chopped
For the Salad
  • 2 cups Lettuce chopped
  • 1 cup Tomatoes diced
  • 1 cup Cucumbers sliced
  • 1/2 medium Red Onion sliced
  • 1/2 cup Kalamata Olives optional

Method
 

Meatballs Preparation
  1. In a large mixing bowl, combine ground beef, minced garlic, finely chopped onions, breadcrumbs, baking soda, and fresh herbs. Drizzle in olive oil and season with salt and black pepper. Mix just until combined, cover with plastic wrap, and refrigerate for at least 2 hours.
Forming Meatballs
  1. Preheat your oven to 425°F (220°C). Roll the meatball mixture into uniform balls, about 1-1.5 inches in diameter, and place them on a greased baking sheet. Bake for approximately 30-40 minutes until browned and cooked through.
Roasting Potatoes
  1. Cut potatoes into wedges, toss with olive oil and seasonings, then spread on a separate baking sheet. Roast for 40-60 minutes, flipping halfway through until golden and crispy.
Making Tzatziki Sauce
  1. In a medium bowl, combine thick Greek yogurt, grated cucumber, minced garlic, lemon juice, and chopped dill or mint. Stir well and season with salt. Cover and chill until ready to serve.
Assembling the Bowl
  1. Layer lettuce at the bottom of the bowl, add roasted potatoes, then meatballs. Top with fresh tomatoes, cucumbers, red onions, and a good dollop of tzatziki sauce. Garnish with kalamata olives and additional herbs.
