For the Soup
  • 2 tablespoons Olive Oil Or any neutral oil like canola or sunflower oil.
  • 3 cloves Garlic (minced) Fresh is best, but garlic powder can be a quicker substitute.
  • 1 medium Red Onion (chopped) Can be substituted with yellow onion.
  • 1 medium Red Bell Pepper (chopped) Swap with green bell pepper for a different flavor.
  • 2 medium Carrots (chopped) Any other root vegetable could work.
  • 1 pound Ground Beef (80/20 preferred) Substitute with turkey or plant-based ground meat.
  • 4 cups Green Cabbage (chopped) Red cabbage is a suitable substitute.
  • 1 can Diced Tomatoes (canned) Fresh tomatoes could substitute if pre-cooked.
  • 1 teaspoon Paprika Substitute with smoked paprika for a pronounced flavor.
  • 1 teaspoon Thyme Dried thyme can be swapped for fresh at a 1:3 ratio.
  • 1 teaspoon Oregano Can use Italian seasoning in its place.
  • to taste Salt and Pepper Season to taste with other herbs if preferred.
  • 4 cups Beef Stock Vegetable stock can be used for a lighter option.

Cooking Steps
  1. In a large pot, heat 2 tablespoons of olive oil over medium-low heat. Add 1 chopped red onion and sauté for about 3 minutes until translucent.
  2. Add 3 minced garlic cloves and 1 chopped red bell pepper. Cook for an additional 2-3 minutes until the garlic is fragrant.
  3. Increase heat to medium and stir in 1 pound of ground beef. Cook for 5-7 minutes, until browned.
  4. Once the beef is nearly fully cooked, stir in 2 chopped carrots and 4 cups of chopped green cabbage. Cover and cook for 5 minutes.
  5. Uncover and add 1 can of diced tomatoes, 1 teaspoon of paprika, and 4 cups of beef stock. Stir well and bring to a gentle simmer for 2-3 minutes.
  6. Reduce heat to low and simmer uncovered for about 20 minutes, stirring occasionally.
  7. Taste and adjust seasoning with salt and pepper. Serve in bowls, optionally with a splash of Worcestershire sauce.
