Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F) and prepare a loaf pan with greased parchment paper.
  2. Whisk together eggs, granulated sugar, vegetable oil, ripe bananas, buttermilk, and vanilla essence in a mixing bowl.
  3. In another bowl, sift together flour, baking powder, and salt, then fold into the wet mixture.
  4. Stir in shredded coconut and walnuts into the batter gently.
  5. Pour the batter into the loaf pan and release air bubbles by tapping the pan.
  6. Bake for 45-50 minutes until golden brown and a skewer comes out clean.
  7. Prepare butterscotch syrup by combining brown sugar, butter, and heavy cream over medium heat until bubbling.
  8. Pierce the loaf with a skewer and pour the warm butterscotch syrup over it.
