  • 1 pound Tortellini fresh or dried
  • 1 cup Tomatoes grape variety
  • 1 cup Olives Kalamata and Castelvetrano
  • 4 ounces Pepperoni diced
  • 4 ounces Sopressata diced
  • 1 cup Mozzarella pearls
  • 4 ounces Provolone diced
  • 1 cup Red Peppers diced
  • 1/2 cup Red Onion thinly sliced
  • 1/2 cup Pepperoncini
  • 1/4 cup Basil freshly chopped
For the Dressing
  • 1/2 cup Olive Oil
  • 1/4 cup Red Wine Vinegar
  • 2 cloves Garlic minced
  • 1 teaspoon Oregano dried
  • 1/4 teaspoon Red Pepper Flakes adjust to taste
  • 1 teaspoon Salt adjust to preference

Method
 

Step-by-Step Instructions
  1. Cook Tortellini: Bring a large pot of salted water to a rolling boil and add the tortellini. Cook for about 4-6 minutes until al dente, then drain and rinse under cold water.
  2. Prep Ingredients: Dice tomatoes, olives, pepperoni, sopressata, and slice red onion and chop basil. Set aside in separate bowls.
  3. Make Dressing: Whisk together olive oil, red wine vinegar, garlic, oregano, and red pepper flakes in a small bowl. Adjust salt to taste.
  4. Combine Salad: In a large bowl, combine cooled tortellini with all prepared ingredients. Drizzle with dressing and gently fold to combine.
  5. Chill: Cover and refrigerate for at least 2 hours or overnight to allow flavors to meld.
  6. Serve and Garnish: Before serving, add chopped basil and toss. Serve in a bowl and garnish with Parmesan cheese.
