Cobbler Instructions
- Preheat oven to 350°F (175°C). Toast pecans on a baking sheet for 5-7 minutes until fragrant.
- Grease a 9x13-inch baking dish with cooking spray or butter.
- Mix granulated sugar, brown sugar, salt, and flour in a large bowl. In another bowl, combine melted butter, eggs, and vanilla. Mix wet and dry ingredients then fold in toasted pecans.
- In another bowl, whisk together flour, sugar, baking powder, and salt. Cut in cold butter until resembling coarse crumbs. Add milk and mix until just combined.
- Pour pecan filling into prepared dish. Carefully pour boiling water over filling without stirring. Spoon cobbler topping over filling, sprinkle demerara sugar if using.
- Bake at 375°F (190°C) for 35-45 minutes until topping is golden and filling is bubbling.
- Allow to cool for 15-20 minutes before serving.
