  • 1/2 cup Granulated Sugar Adjust to preferred level of sweetness.
  • 1 tablespoon Baking Powder Essential for fluffiness.
  • 1/2 cup Cold Butter Cut in properly for best texture.
  • 1/2 cup Milk Almond or oat milk suitable for dairy-free.
  • 2 tablespoons Demerara Sugar Optional for sprinkling on top.

Method
 

Cobbler Instructions
  1. Preheat oven to 350°F (175°C). Toast pecans on a baking sheet for 5-7 minutes until fragrant.
  2. Grease a 9x13-inch baking dish with cooking spray or butter.
  3. Mix granulated sugar, brown sugar, salt, and flour in a large bowl. In another bowl, combine melted butter, eggs, and vanilla. Mix wet and dry ingredients then fold in toasted pecans.
  4. In another bowl, whisk together flour, sugar, baking powder, and salt. Cut in cold butter until resembling coarse crumbs. Add milk and mix until just combined.
  5. Pour pecan filling into prepared dish. Carefully pour boiling water over filling without stirring. Spoon cobbler topping over filling, sprinkle demerara sugar if using.
  6. Bake at 375°F (190°C) for 35-45 minutes until topping is golden and filling is bubbling.
  7. Allow to cool for 15-20 minutes before serving.
