  • 200 grams Digestive Biscuits
  • 100 grams Butter unsalted, melted
For the Caramel Layer
  • 200 grams Granulated Sugar
  • 100 ml Double Cream
  • 200 grams Biscoff Spread
For the Chocolate Topping
  • 200 grams Semi-Sweet or Dark Chocolate
  • 50 grams Butter
For the Garnish
  • 50 grams Biscoff Cookie Crumbles

Method
 

Preparation Steps
  1. Preheat your oven to 180°C (350°F) and line a rectangular baking tray with parchment paper.
  2. In a large bowl, combine crushed digestive biscuits and melted butter until well mixed. Press into the tray to form an even base.
  3. Bake in the preheated oven for 10–12 minutes or until lightly golden.
  4. In a medium saucepan, combine granulated sugar and double cream over medium heat, stirring continuously until sugar dissolves.
  5. Cook until thickened and amber, about 5–7 minutes. Remove from heat and fold in Biscoff spread.
  6. Pour caramel over cooled biscuit base, spreading evenly.
  7. Melt chocolate in a heatproof bowl over simmering water or in the microwave. Stir in butter for silkiness.
  8. Pour melted chocolate over caramel layer, spreading evenly with a spatula.
  9. Sprinkle Biscoff cookie crumbles over chocolate before it sets.
  10. Allow to cool at room temperature for 30 minutes, then refrigerate for at least 2 hours.
  11. Slice into squares or rectangles and serve.
