  • 2 cloves Garlic Minced
  • 0.5 cups Parsley Chopped
  • 0.5 cups Parmesan Cheese Grated or substitute with mozzarella for creaminess
  • 0.5 cups Breadcrumbs Use gluten-free for gluten-free option
  • 1 large Egg Beaten
  • to taste Salt
  • to taste Pepper

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Grate the zucchini and squeeze out excess moisture using a kitchen towel.
  3. In a bowl, mix the drained zucchini with garlic, parsley, Parmesan cheese, breadcrumbs, salt, pepper, and the beaten egg.
  4. Form small round balls (1-2 inches) and place them on the baking sheet with space in between.
  5. Bake for 20 to 25 minutes, turning halfway for even browning, until golden-brown.
  6. For extra crunch, air fry the bites at 375°F (190°C) for an additional 5 minutes.
  7. Allow to cool slightly before serving with your choice of dipping sauce.
