  • 1 large Cucumber Slice thin using a mandoline.
  • 1 medium Shallot Provides a mild onion flavor.
  • 1 bunch Fresh Herbs (Mint, Cilantro) Adjust quantities to taste.
Dressing
  • 1 tablespoon Red Curry Paste Adjust spice level to your liking.
  • 2 tablespoons Fish Sauce Coconut aminos can be used as a substitute.
  • 3 tablespoons Lime Juice Fresh is best.
  • 2 cloves Garlic Minced; garlic powder can be a quick substitute.
Optional Crunch
  • 1/4 cup Peanuts Consider omitting for a nut-free version.

Method
 

Preparation
  1. Slice the cucumbers and shallots into thin pieces using a mandoline. Rinse and chop the mint and cilantro.
  2. Combine day-old or freshly cooked jasmine rice with oil and red curry paste in a mixing bowl. Mix until well-coated.
  3. Spread the rice mixture in an air fryer basket. Cook at 420°F for about 8 minutes, shaking halfway through.
  4. Whisk together lime juice, garlic, and fish sauce in a small bowl until smooth.
  5. In a large mixing bowl, toss the crispy rice with cucumbers, shallots, and herbs. Drizzle with dressing.
