  • 8 sheets Phyllo Pastry Use fresh or thawed frozen for best results.
  • 8 oz Feta Cheese Can substitute with halloumi or goat cheese.
  • 2 tbsp Fresh Dill Or dried dill at one-third quantity.
  • 2 tbsp Fresh Mint Or dried mint at reduced quantity.
  • 1 tsp Lemon Zest
  • 1/2 tsp Black Pepper White pepper can be an alternative.
  • 1/4 cup Olive Oil Extra virgin preferred.
For the Drizzle
  • 1/2 cup Honey
  • 1 tsp Chili Flakes Adjust based on desired spiciness.
  • 1 tbsp Lemon Juice

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine crumbled feta cheese, fresh dill, mint, lemon zest, and black pepper. Mix until well incorporated.
  3. Layer two sheets of phyllo pastry on a clean surface. Brush each layer with olive oil and cut into four strips.
  4. Place about 1 tablespoon of the feta mixture at the end of each phyllo strip, fold in sides, and roll tightly.
  5. Brush the tops of each phyllo roll lightly with olive oil.
  6. Bake for 18-20 minutes until golden brown and crispy.
  7. In a small saucepan, combine honey, chili flakes, and lemon juice over medium heat, stirring until warm.
  8. Drizzle the warm sweet chili honey over the rolls and serve warm.
