Ingredients
  

For the Mushrooms
  • 1 cup Oyster Mushrooms Feel free to substitute with other firm mushrooms.
  • 1 cup All-Purpose Flour Gluten-free flour can be used.
  • 0.5 cup Cornstarch Use more flour if cornstarch is unavailable.
  • 1 tbsp Sweet Paprika Smoked paprika is an optional swap.
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Turmeric Optional.
For the Gravy
  • 2 tbsp Vegetable Oil Any neutral oil will work.
  • 1 tsp Flaky Sea Salt
  • 2 tbsp Vegan Butter Any plant-based butter or oil can be used.
  • 1 cup Cremini Mushrooms Button mushrooms are a good substitute.
  • 1 clove Garlic Minced, can be skipped if allergic.
  • 2 tbsp Chives Can be replaced with green onions or omitted.
For the Buttermilk
  • 1 cup Almond Milk Any preferred non-dairy milk works.
  • 1 tbsp Apple Cider Vinegar Omit if using traditional buttermilk.

Method
 

Preparation Steps
  1. In a medium mixing bowl, combine the almond milk with apple cider vinegar. Let it sit until it thickens slightly.
  2. Clean and slice the oyster mushrooms, ensuring they are about ½-inch thick.
  3. In a large mixing bowl, whisk together flour, cornstarch, garlic powder, onion powder, sweet paprika, turmeric, kosher salt, and black pepper.
  4. Dip each mushroom piece into the buttermilk, then dredge in the seasoned flour mixture. Set aside.
  5. Heat about ½ inch of vegetable oil in a skillet over medium-high heat. Fry mushrooms for 3-5 minutes per side until golden brown.
  6. In a separate pan, melt vegan butter and sauté cremini mushrooms until soft. Add minced garlic if desired.
  7. Sprinkle flour over sautéed mushrooms and form a roux. Gradually whisk in almond milk and cook until the gravy thickens.
  8. Serve the crispy Chicken-Fried Mushrooms topped with gravy and sprinkle with chives.

Notes
