Dough Preparation
- In a large bowl, combine 250 g all-purpose flour, 1 teaspoon of sugar, 1/2 teaspoon of salt, and 1 teaspoon of active dry yeast. Mix these dry ingredients well, then add 160 ml of warm water and 2 tablespoons of olive oil.
- Transfer your sticky dough onto a floured surface and knead it for about 5 minutes until smooth and elastic.
- Place the kneaded dough in a greased bowl, covering it with a damp cloth or plastic wrap. Allow it to rest in a warm spot for 30 minutes.
Pizza Cooking
- Preheat your oven to 475°F. Warm your cast iron skillet over medium heat for 5-7 minutes.
- Once the dough has risen, gently punch it down to release air. On a floured surface, stretch the dough into a disk that fits your skillet.
- Spread about 100 g of pizza sauce evenly over the dough, then sprinkle 150 g of shredded mozzarella cheese on top and arrange 50 g of pepperoni slices.
- Drizzle 1 tablespoon of olive oil around the crust edge to help achieve an even crispiness.
- Transfer the skillet to the preheated oven and bake for 12 to 15 minutes.
- Once baked, remove the pizza from the oven and let it cool slightly for easy handling.
