  • 1/2 cup All-Purpose Flour Can switch to gluten-free flour
  • 2 large Eggs Lightly beaten
  • 1 cup Panko Breadcrumbs Preferred for crunch
  • 1/4 cup Grated Parmesan Cheese Can swap with nutritional yeast
For Seasoning
  • 1 tablespoon Italian Seasoning Customize with dried herbs as desired
  • 1 teaspoon Garlic Powder Or use fresh garlic
  • 1 teaspoon Salt To taste
  • 1/2 teaspoon Black Pepper To taste
For Crisping
  • 1 tablespoon Olive Oil Spray Can use other oils like canola

Preparation
  1. Start by trimming the ends of your medium-sized zucchini and slicing it into ½-inch thick fries. Lay the fries flat on a clean kitchen towel to remove excess moisture.
  2. Create a breading station with three shallow dishes: one for flour, one for beaten eggs, and one for the breadcrumb mixture.
  3. Take each zucchini fry, dip it into the flour, then coat with the beaten egg, and finally roll in the breadcrumb mixture.
  4. Preheat your air fryer to 400°F. Arrange the coated zucchini fries in a single layer in the air fryer basket, lightly spray with olive oil.
  5. Cook the zucchini fries at 400°F for 10-12 minutes, checking halfway for doneness. Remove once they're golden brown.
  6. Serve immediately with your favorite dipping sauces.
