Preparation
- Start by trimming the ends of your medium-sized zucchini and slicing it into ½-inch thick fries. Lay the fries flat on a clean kitchen towel to remove excess moisture.
- Create a breading station with three shallow dishes: one for flour, one for beaten eggs, and one for the breadcrumb mixture.
- Take each zucchini fry, dip it into the flour, then coat with the beaten egg, and finally roll in the breadcrumb mixture.
- Preheat your air fryer to 400°F. Arrange the coated zucchini fries in a single layer in the air fryer basket, lightly spray with olive oil.
- Cook the zucchini fries at 400°F for 10-12 minutes, checking halfway for doneness. Remove once they're golden brown.
- Serve immediately with your favorite dipping sauces.
