Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with butter or cooking spray.
  2. Wash and chop the cauliflower, broccoli, and sliced carrots into bite-sized pieces. Steam these vegetables for 5-7 minutes until just tender.
  3. In a medium saucepan, melt 4 tablespoons of butter over medium heat. Stir in an equal amount of all-purpose flour to create a roux and cook for 1-2 minutes until bubbly and lightly golden.
  4. Slowly whisk in 2 cups of warm milk to the roux until smooth. Cook, stirring frequently, for about 3-5 minutes until it thickens.
  5. Remove from heat and stir in garlic powder, ground nutmeg, salt, and pepper. Gradually add in 1 cup of shredded cheddar and ½ cup of grated Parmesan cheese until melted and creamy.
  6. Combine steamed vegetables and cheese sauce in a large mixing bowl until evenly coated.
  7. Transfer into the prepared baking dish and sprinkle optional breadcrumbs on top.
  8. Bake for 20-25 minutes, until bubbling and golden brown. Optionally broil for an extra 2-3 minutes for a crispy top.
  9. Allow to cool for 5-10 minutes before serving. Garnish with chopped parsley.
