  • 2 cups Broccoli Florets any leafy greens can substitute
  • 1 cup Carrots pre-peeled baby carrots
  • 1 cup Frozen Peas fresh peas can replace them
For the Pasta
  • 8 ounces Whole Wheat Rotini or regular pasta if gluten-free is not a concern
For the Sauce
  • 2 cups Whole Milk or 1% or almond milk
  • 1 teaspoon Garlic Powder or fresh minced garlic
  • 1 teaspoon Onion Powder
  • 1 teaspoon Ground Mustard or omit for a milder flavor
  • 1 teaspoon Kosher Salt to taste
  • 1 teaspoon Black Pepper to taste
For the Cheese
  • 1 cup Gouda Cheese (shredded) or Fontina or Monterey Jack
  • 1 cup Sharp Cheddar Cheese (shredded)
  • 1/2 cup Parmesan Cheese (shredded)
For the Topping
  • 1/2 cup Breadcrumbs panko for extra crispiness
  • 1/2 teaspoon Red Pepper Flakes optional for a spicy kick

Step-by-Step Instructions
  1. Begin by preparing your vegetables. In a steamer basket or a microwave-safe bowl with a lid, steam the broccoli florets, cauliflower florets, and baby carrots for about 2-3 minutes until they are just tender but still vibrant in color.
  2. In a large stock pot, combine the whole wheat rotini with whole milk, garlic powder, onion powder, ground mustard, kosher salt, and black pepper. Place the pot over medium-low heat and stir continuously to prevent sticking. Cook the pasta until it’s al dente, about 8-10 minutes.
  3. Once the pasta reaches the perfect texture, remove the pot from the heat. Gradually stir in the shredded gouda, sharp cheddar, and parmesan cheeses, allowing them to melt and combine with the warm pasta and sauce.
  4. Gently fold in the steamed broccoli, cauliflower, and carrots into the cheese sauce until they are evenly coated.
