Ingredients
  

For the Pasta
  • 12 ounces Rigatoni Pasta Substitute with any pasta shape like penne.
For the Sauce
  • 1 cup Passata (Tomato Sauce) Fresh tomatoes can be used if preferred.
  • 1 Onion Finely chopped.
  • 2 cloves Garlic Minced.
  • 2 tablespoons Extra Virgin Olive Oil Used for sautéing.
  • 1 tablespoon Italian Seasoning Can be substituted with individual dried herbs.
  • Salt To taste.
  • Black Pepper To taste.
For the Creaminess
  • 1 cup Ricotta Cheese Can be substituted with cottage cheese.
  • ½ cup Parmesan Cheese Grated or shaved.
  • Fresh Basil Tear leaves to release flavor.

Method
 

Cooking Instructions
  1. In a large skillet, heat 2 tablespoons of extra virgin olive oil over medium-high heat.
  2. Add 1 finely chopped onion to the skillet and sauté for about 3–4 minutes.
  3. Toss in 2 minced garlic cloves and continue sautéing for 1 minute.
  4. Stir in 1 cup of passata along with 1 tablespoon of Italian seasoning, salt, and black pepper. Simmer for about 10 minutes.
  5. Bring a large pot of salted water to a boil. Add 12 ounces of rigatoni and cook until al dente.
  6. Once the sauce has thickened, stir in ½ cup of grated Parmesan cheese and a handful of torn fresh basil.
  7. Gently fold in 1 cup of ricotta cheese into the sauce.
  8. Add the drained rigatoni to the skillet, tossing to coat with the sauce.
  9. Dish up the Tomato Ricotta Pasta while hot, garnishing with additional grated Parmesan and fresh basil.
