Step-by-Step Instructions
  1. Prep Ingredients: Heat a skillet, add olive oil and sauté mushrooms for 5-7 minutes, add garlic, and season with salt and pepper. Set aside.
  2. Sauté Spinach: In the same skillet, add more olive oil and sauté spinach for 3-4 minutes until wilted. Combine with mushrooms.
  3. Make the Sauce: Mix ricotta, heavy cream, and half parmesan in a bowl. Season with salt and pepper.
  4. Assemble Lasagna: In a baking dish, layer ricotta mixture, noodles, mushroom-spinach, and mozzarella. Repeat layers ending with noodles and mozzarella.
  5. Bake: Cover with foil and bake at 375°F for 25 minutes, then uncover and bake for an additional 15-20 minutes until golden.
  6. Rest: Let the lasagna rest for 10-15 minutes before slicing.
