  • 8 ounces Sliced mushrooms (button or cremini) your favorite variety
  • 4 ounces Fresh spinach can substitute with kale or Swiss chard
  • 1 cup Heavy cream for lighter fare, consider half-and-half or cashew cream
  • 1/2 cup Grated Parmesan cheese Nutritional yeast as vegan substitute
  • 2 cloves Garlic (minced) can use garlic powder if necessary
  • to taste Salt

  • 1 tablespoon Italian seasoning fresh basil or oregano can be substituted
Optional Garnish
  • 2 tablespoons Fresh parsley (chopped) for garnishing

Method
 

Cooking Instructions
  1. Cook the Ravioli: Boil a pot of salted water. Add ravioli and cook for 3-4 minutes. Drain and set aside.
  2. Sauté the Mushrooms: Heat olive oil or butter over medium heat. Add mushrooms and sauté for 5 minutes until golden brown.
  3. Add Garlic: Stir in minced garlic and cook for an additional minute until fragrant.
  4. Incorporate the Spinach: Add spinach to the skillet, sauté for 2-3 minutes until wilted.
  5. Create the Alfredo Sauce: Pour in heavy cream, bring to a simmer, then add Parmesan, Italian seasoning, salt, and pepper. Cook until thickened.
  6. Combine Ravioli with Sauce: Add drained ravioli to the sauce, toss gently to coat and cook for 1-2 minutes.
  7. Garnish and Serve: Sprinkle with parsley if desired, and serve warm.
