For the Cream Sauce

  • 1/2 cup Parmesan Cheese or nutritional yeast
  • 1/2 cup Shredded Cheddar Cheese or any mild cheese

Method
 

Step-by-Step Instructions
  1. Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Heat olive oil in a large skillet over medium-high heat and sear chicken for 4-5 minutes on each side until golden brown. Remove from skillet.
  2. In a saucepan, bring chicken broth and a pinch of salt to boil. Stir in rice, reduce heat to low, cover, and simmer for 15-18 minutes until liquid is absorbed and rice is tender. Fluff with a fork.
  3. In the same skillet, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes. Gradually add milk and chicken broth, stirring until smooth and sauce thickens, about 4-5 minutes.
  4. Return chicken to skillet, add garlic powder, cheddar cheese, and Parmesan, stirring gently. Cover and simmer on low for 10 minutes until heated through.
  5. To serve, place rice on a plate, top with smothered chicken and sauce, and garnish with parsley.
