Step-by-Step Instructions
- Bring a large pot of salted water to a rolling boil over high heat. Once boiling, add ¾ pound of your favorite pasta. Cook according to the package instructions, typically around 8-10 minutes, or until the pasta reaches al dente texture.
- In a medium saucepan, melt 2 tablespoons of butter over medium heat. Whisk in 2 tablespoons of flour, cooking for about 2 minutes until the mixture is smooth and lightly bubbly but not browned.
- Gradually pour in 1 cup of milk while continuously whisking to avoid lumps. Stir constantly for about 3-5 minutes until the sauce thickens and coats the back of a spoon.
- Add ½ to ¾ cup of pesto to the saucepan. Mix well and remove from heat.
- Drain the cooked pasta and return it to the pot. Pour the creamy pesto sauce over the pasta, stirring gently to coat.
- Serve immediately while hot. Optionally, top with cooked protein like chicken or shrimp, or fresh veggies.
