Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Cook ziti according to package instructions until al dente, about 10 minutes.
  2. Mince garlic and grate Parmesan cheese; set aside.
  3. Melt butter in a large skillet over medium heat. Add minced garlic and sauté for 30-45 seconds until fragrant.
  4. Whisk in flour over the garlic-butter mixture and cook for about 2 minutes until bubbly.
  5. Slowly whisk in chicken stock and half and half, simmer for 2-3 minutes until sauce thickens.
  6. Add lemon juice, oregano, garlic powder, black pepper, and red pepper flakes to the sauce.
  7. Stir in grated Parmesan cheese over low heat until melted.
  8. Add spinach to the sauce and stir until it wilts.
  9. Combine drained ziti with the sauce, adding reserved pasta water if needed to adjust consistency.
  10. Serve warm, enjoying with a side salad or garlic bread.
