Step-by-Step Instructions
  1. Prepare the Crust: In a medium bowl, combine graham cracker crumbs and melted butter until evenly moistened. Press this mixture into the bottom of an 8-inch springform pan and chill for 10-15 minutes.
  2. Make the Filling: Beat room-temperature cream cheese with sugar and cornstarch until smooth (2-3 minutes). Add eggs gradually, mixing gently after each.
  3. Incorporate Additional Ingredients: Mix in sour cream, lemon juice, and vanilla extract until just combined.
  4. Pour the Filling: Remove the crust from the refrigerator and pour the cheesecake filling over it. Smooth the top with a spatula.
  5. Bake in a Water Bath: Place the springform pan inside a larger roasting pan and add hot water until halfway up the sides. Bake at 302°F for 30-45 minutes.
  6. Cool the Cheesecake: After baking, turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
