  • 1 cup Sweet Corn thawed if frozen
  • 1 cup Red Bell Pepper diced
  • 1 cup Green Bell Pepper diced
  • ½ cup Red Onion finely chopped
  • 1 cup Cheddar Cheese shredded, or use dairy-free cheese
  • ¼ cup Cilantro chopped
For the Dressing
  • ¾ cup Mayonnaise or dairy-free mayo
  • ½ cup Sour Cream or dairy-free sour cream
  • 2 tablespoons Lime Juice
  • 2 tablespoons Taco Seasoning
  • to taste Salt
  • to taste Black Pepper

Step-by-Step Instructions
  1. Cook the Elbow Macaroni: Bring 3 cups of salted water to a rapid boil, add elbow macaroni and cook for 8-10 minutes until al dente. Drain and rinse under cold water.
  2. Prepare the Creamy Dressing: In a medium bowl, whisk together mayonnaise, sour cream, lime juice, and taco seasoning. Add salt and pepper to taste.
  3. Mix the Salad Ingredients: In a large bowl, combine cooled macaroni, black beans, sweet corn, red and green bell peppers, red onion, cheddar cheese, and cilantro. Stir gently.
  4. Combine Dressing with Salad: Drizzle the dressing over the salad ingredients and fold gently to coat evenly.
  5. Chill and Serve: Cover and refrigerate for at least 1 hour before serving. Stir gently before serving and adjust salt if needed.
