Step-by-Step Instructions for Creamy Lemon Shrimp
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 2 tablespoons of minced garlic. Sauté for about 1–2 minutes until the garlic is fragrant and lightly golden.
  2. Add the deveined shrimp to the skillet in a single layer and pour approximately 2 tablespoons of freshly squeezed lemon juice over them. Season with salt and pepper. Cook for about 3–4 minutes until the shrimp are pink and almost fully opaque.
  3. Reduce heat to low, pour in 1 cup of nutpods or almond milk and 1/4 cup of water or broth, stirring gently. Allow to simmer for about 2 minutes.
  4. Create a small empty space in the skillet and add 1 tablespoon of arrowroot starch. Whisk it into the sauce until completely dissolved.
  5. Stir the shrimp back into the sauce, cooking for an additional minute until the shrimp are fully coated. Remove from heat.
  6. Plate the creamy lemon shrimp over zucchini noodles and garnish with parsley and lemon slices. Serve immediately.
