- In a large skillet, heat 2 tablespoons of olive oil over medium heat.
- Add 1 finely chopped onion, 1 shredded carrot, 1 diced zucchini, and 1 diced red bell pepper. Sauté for 6–8 minutes until softened.
- Stir in 2 minced garlic cloves, 1 teaspoon of salt, ½ teaspoon of black pepper, 1 teaspoon of dried Italian seasoning, and ½ teaspoon of paprika. Cook for an additional minute.
- Remove the skillet from heat and let the mixture cool for about 5 minutes.
- Transfer to a bowl and add 8 ounces of softened cream cheese, ½ cup of mayonnaise, 1 cup of shredded mozzarella, ¼ cup of chopped parsley, and the juice of 1 lemon. Stir until creamy.
- Cover the bowl and refrigerate for at least 30 minutes.
