Cooking Steps
  1. Chop 2 lbs of potatoes into bite-sized cubes and combine with 2 cups of chicken broth, 8 oz of chopped bacon, 1/2 medium onion, and 2 minced garlic cloves in the crockpot. Season with 1 tsp salt and 1/4 tsp black pepper.
  2. Cover and cook on high for 3-4 hours or low for 5-6 hours until potatoes are fork-tender.
  3. Lightly mash the potatoes to your desired consistency in the crockpot, allowing some chunks to remain for texture.
  4. Add 4 Tbsp of unsalted butter, 1/4 cup of all-purpose flour, and 2 cups of whole milk. Stir well, then mix in 1 cup of cheddar cheese and 3/4 cup of sour cream. Cook on low for an additional 30 minutes to 1 hour.
  5. Ladle soup into bowls and garnish with chopped green onions. Add extra toppings if desired.
