- Preheat your oven to 400°F (200°C). Grease a 9 x 13 baking dish.
- Season the chicken thighs with Italian seasoning, kosher salt, and black pepper.
- Sear the chicken in a skillet with 2 tablespoons of butter for 2-3 minutes each side.
- Sauté the spinach in the same skillet until wilted, about 2 minutes.
- Layer the seared chicken, baby potatoes, and spinach in the prepared baking dish.
- Prepare the cream sauce by sautéing garlic, adding flour, chicken broth, and half and half until thickened.
- Pour the sauce over the layered ingredients and bake for 25-30 minutes until chicken is done.
- Let it rest for a few minutes and garnish with parsley before serving.
