Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C). Grease a 9 x 13 baking dish.
  2. Season the chicken thighs with Italian seasoning, kosher salt, and black pepper.
  3. Sear the chicken in a skillet with 2 tablespoons of butter for 2-3 minutes each side.
  4. Sauté the spinach in the same skillet until wilted, about 2 minutes.
  5. Layer the seared chicken, baby potatoes, and spinach in the prepared baking dish.
  6. Prepare the cream sauce by sautéing garlic, adding flour, chicken broth, and half and half until thickened.
  7. Pour the sauce over the layered ingredients and bake for 25-30 minutes until chicken is done.
  8. Let it rest for a few minutes and garnish with parsley before serving.
