  • 2 medium Carrots Can substitute with zucchini.
  • 1 stalk Celery Can be omitted.
  • 2 cloves Garlic Can use garlic powder if needed.
  • 1 teaspoon Fresh Thyme Dried herbs can be used.
  • 1 teaspoon Fresh Rosemary Can substitute with dried herbs.
  • 2 cups Vegetable Broth Check for gluten-free if needed.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Peel and chop sweet potatoes, add to salted water, and boil for about 15 minutes until tender.
  3. Heat olive oil in a skillet. Sauté diced onions, carrots, and celery for 5–7 minutes.
  4. Stir in minced garlic, fresh thyme, and rosemary, cooking for another minute.
  5. Rinse lentils and add to the skillet with vegetable broth. Bring to a gentle boil, then simmer for 20–25 minutes.
  6. Mash cooked sweet potatoes with salt, pepper, and a splash of plant-based milk.
  7. Layer the lentil mixture in a baking dish, then spread the sweet potato mash on top.
  8. Bake for 25–30 minutes until the top is golden and slightly crispy.
  9. Cool for 5–10 minutes before serving.
