  • 2 cups Chicken Broth Use vegetable broth for a vegetarian option.

  • Shredded Cheddar Cheese Can substitute for dairy-free cheese.

Method
 

Cooking Steps
  1. Heat the oil in a large Dutch oven over medium heat until shimmering.
  2. Brown the sausage for 8-10 minutes until cooked through, then remove and set aside.
  3. Sauté onion and red bell pepper until the onion is translucent, about 10-12 minutes.
  4. Stir in garlic, cumin, chili powder, salt, black pepper, and cinnamon; cook for 30 seconds.
  5. Combine fire-roasted tomatoes, beans, pumpkin puree, and chicken broth; add back the sausage and stir well.
  6. Bring to a boil, then reduce heat and let simmer for about 20 minutes.
  7. Taste and adjust seasoning as needed.
  8. Let the chili sit for a few minutes, then serve with optional garnishes.
