Step-by-Step Instructions for Spaghetti & Meatball Skillet Supper
  1. Begin by heating 2 tablespoons of olive oil in a large skillet over medium heat. Once hot, add in your frozen turkey meatballs and sauté them for about 5 minutes, turning occasionally until they’re golden brown on all sides.
  2. Carefully stir in one 28-ounce can of whole tomatoes, including their juices, along with one 15-ounce can of drained cannellini beans and one 14-ounce can of quartered artichoke hearts. Sprinkle in ½ teaspoon of Italian seasoning and pour in 14.5 ounces of reduced-sodium chicken broth. Bring the mixture to a gentle boil for about 3-4 minutes.
  3. Once boiling, gently add 4 ounces of uncooked spaghetti, pushing it into the sauce so it is mostly submerged. Cover the skillet, reduce the heat to low, and let it simmer for 10-12 minutes, stirring occasionally.
  4. After cooking, remove the skillet from heat. Stir in ¼ cup of chopped fresh parsley and 1 tablespoon of lemon juice, mixing well to integrate the bright flavors.
  5. Spoon the hearty Spaghetti & Meatball Skillet Supper onto plates or into bowls. If desired, sprinkle with grated Parmesan cheese before serving.
