Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease your mini loaf pans or a single large loaf pan.
  2. In a small bowl, combine ½ cup sugar with 2 teaspoons ground cinnamon and mix well.
  3. In a large mixing bowl, combine ¾ cup sugar, ½ cup oil, 3 tablespoons sour cream, and 2 large eggs. Whisk until blended.
  4. Add 1 teaspoon baking soda, ½ teaspoon salt, and 3 mashed bananas. Stir until combined.
  5. Gently fold in 2 cups of all-purpose flour until no dry flour remains.
  6. Sprinkle a layer of the cinnamon sugar mixture at the bottom of each greased pan, pour in half the batter, add more cinnamon sugar, then the rest of the batter, and top with remaining cinnamon sugar.
  7. Bake mini loaves for about 30 minutes or large loaf for 60 minutes, performing a toothpick test to check if baked.
  8. Allow to cool in pans for about 10 minutes, then transfer to a wire rack to cool completely.
