  • 1/4 teaspoon Black Pepper Increase for a spicier flavor.
  • 1/2 teaspoon Onion Powder Fresh onion can be used if finely chopped.

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin with olive oil.
  2. Whisk the large eggs in a mixing bowl until fully blended and slightly frothy, about 2 minutes.
  3. Add cottage cheese to the eggs and stir until the mixture is smooth and well integrated.
  4. Fold in shredded cheddar cheese until evenly distributed.
  5. Add chopped spinach, red bell pepper, garlic powder, salt, black pepper, and onion powder; stir until combined.
  6. Activate the baking powder with a small amount of water, then fold it into the egg mixture.
  7. Drizzle olive oil into the batter and mix until just combined.
  8. Carefully fill each muffin cup with the egg mixture nearly to the top.
  9. Bake for 18 to 20 minutes, until set and golden.
  10. Allow to cool for about 5 minutes, then release the bites from the muffin tin.
