  • 1 cup mixed bell peppers Sliced, red and yellow.
  • 1 medium onion Diced.
  • 1 tablespoon fresh lime juice Brightens flavors.
  • 1/4 cup fresh cilantro Chopped, for garnish.

  • 1 medium zucchini Sliced.
  • 2 cups spinach Fresh leaves.
  • 1 medium carrots Diced or sliced.

Method
 

Cooking Steps
  1. Heat 1 tablespoon of olive oil in a large pot over medium heat. Add 1 diced onion and sauté until translucent, about 5 minutes. Stir in 2 minced garlic cloves and 1 tablespoon of grated fresh ginger; cook for another 1-2 minutes until fragrant.
  2. Incorporate 1 cup of mixed sliced bell peppers into the pot, sautéing for about 5 minutes until they become slightly softened.
  3. Pour in 1 can of coconut milk and 2 cups of low-sodium vegetable broth, stirring well to combine. Bring to a gentle simmer over medium heat for about 5 minutes.
  4. Carefully add 1 pound of white fish fillets to the pot. Reduce heat to low and cover, allowing the fish to cook for about 10 minutes.
  5. Squeeze the juice of 1 fresh lime over the stew and sprinkle in 1/4 cup of chopped cilantro before serving. Enjoy!
