Step-by-Step Instructions
  1. In a medium bowl, combine mayonnaise, lime juice, honey, hot sauce, chili powder, minced garlic, and salt. Whisk until smooth and creamy.
  2. Prepare three shallow bowls for breading: one with flour, one with beaten egg, and one with the panko-coconut mixture.
  3. Coat each shrimp in flour, dip into the beaten egg, then press into the panko-coconut mixture until fully coated.
  4. Heat oil in a skillet over medium-high heat to 350°F. Fry shrimp in batches for 2-3 minutes on each side until golden brown.
  5. Warm tortillas in a skillet for about 30 seconds on each side.
