Method
 

Step-by-Step Instructions
  1. In a cocktail shaker, combine 4 to 5 fresh raspberries with 1 ounce of freshly squeezed lime juice and 1 ounce of light rum. Muddle gently until the raspberries are mashed and juicy, about 30 seconds.
  2. Strain the raspberry mixture over crushed ice in a Collins or beer glass using a fine mesh strainer.
  3. In a separate cocktail shaker, combine 2 ounces of cream of coconut, 2 ounces of pineapple juice, and 1 ounce of light rum. Shake vigorously for about 15 seconds until frothy.
  4. Carefully pour the coconut mixture on top of the raspberry layer in the glass.
  5. Garnish with extra fresh raspberries and a lime wheel placed on the rim of the glass or on top of the drink.
