  • 3/4 cup brown sugar or white sugar if needed
  • 1 large egg or flax egg (1 tbsp ground flaxseed + 2.5 tbsp water)
  • 1 teaspoon maple extract or vanilla extract if unavailable
  • 1/2 cup milk plus 1 tablespoon of lemon juice for buttermilk
  • 1 cup pumpkin puree moisture pressed out
  • 1 cup all-purpose flour or gluten-free flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt or regular salt
  • 1 teaspoon cinnamon and other spices for flavor
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • a pinch ground cloves
  • 1 cup granulated sugar for coating, or coconut sugar
  • 1/4 teaspoon cardamom omit if desired
For the Optional Cream Cheese Dip
  • 4 ounces cream cheese or vegan cream cheese
  • 1/2 cup powdered sugar

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. Combine melted butter, brown sugar, egg, and maple extract in a bowl and whisk until creamy.
  3. Mix milk and lemon juice in a small bowl and let sit to create buttermilk.
  4. Press pumpkin puree with paper towels to remove moisture, then stir into the wet mixture.
  5. In another bowl, whisk flour, baking powder, baking soda, salt, and spices together.
  6. Fold the dry ingredients into the wet mixture until just combined.
  7. Fill the muffin tin cavities 3/4 full with batter and bake for 10-12 minutes.
  8. Cool in the pan for 5 minutes, then dip in melted butter and roll in cinnamon sugar.
  9. For the cream cheese dip, beat cream cheese and powdered sugar until smooth, optionally adding maple extract.
