For the Salad
  • 1 can Chickpeas drained and rinsed
  • 1 cup Edamame thawed
  • 2 cups Green Cabbage finely shredded
  • 1 cup Red Cabbage finely shredded
  • 1 cup Carrots shredded
  • ¼ cup Green Onions thinly sliced
For the Dressing
  • ¼ cup Toasted Sesame Seeds lightly toasted
  • ¼ cup Sesame Oil
  • 2 tablespoons Rice Vinegar or apple cider vinegar
  • 1 tablespoon Fresh Ginger grated
  • 1 tablespoon Honey or Maple Syrup for vegan option use maple syrup

Method
 

Preparation
  1. In a large mixing bowl, combine the chickpeas, edamame, green cabbage, red cabbage, shredded carrots, and green onions.
  2. In a separate bowl, whisk together the sesame oil, rice vinegar, honey or maple syrup, and grated ginger until smooth.
  3. If the dressing is too thick, add a teaspoon of water gradually while whisking until desired consistency is reached.
  4. Pour the dressing over the salad mixture and gently toss to coat.
  5. Let the salad sit for at least 10 minutes to allow flavors to meld.
  6. Before serving, sprinkle with toasted sesame seeds and toss gently.
