- In a food processor, combine Medjool dates, protein powder, sunflower seed butter, and a pinch of salt. Pulse for about 1-2 minutes until the mixture transforms into a sticky dough.
- Use a small cookie scoop or your hands to portion out the mixture. Roll each portion into a ball about 1 inch in diameter.
- Place the tray of formed protein bites in the refrigerator for at least 30 minutes to firm up.
- If coating, melt dark chocolate in a microwave-safe bowl in 30-second intervals until smooth. Dip each chilled bite in chocolate, letting excess drip off.
- Transfer completed bites to an airtight container. They can be stored in the refrigerator for up to one month or frozen for up to three months.
