Step-by-Step Instructions for Cheesy Zucchini Breadsticks
  1. Prepare 2-3 medium zucchinis by grating them. Squeeze out excess liquid using a clean kitchen towel.
  2. In a large mixing bowl, combine the grated zucchini, 1 cup shredded mozzarella, ½ cup grated Parmesan, and 1 beaten egg. Add 1 teaspoon garlic parsley salt and mix thoroughly.
  3. Preheat oven to 425°F (220°C). Line a baking dish with parchment paper. Spread zucchini mixture evenly in the pan to about half an inch thick. Bake for 15 minutes.
  4. After baking, sprinkle additional grated cheese on top. Return to oven and bake for another 2-5 minutes until cheese is melted and golden.
  5. Allow the breadsticks to cool for a couple of minutes. Slice into sticks and serve warm, optionally with marinara sauce for dipping.
