Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. In a skillet, heat olive oil and sauté diced onions until translucent, about 3-4 minutes. Add garlic, cook until fragrant, then stir in spinach until wilted, about 2-3 minutes. Let cool slightly.
  3. In a bowl, combine the cooled spinach mixture with ricotta and Parmesan cheese. Season with salt and pepper and mix well.
  4. On a floured surface, roll out puff pastry and cut into 4x4 inch squares. Spoon filling into each square, fold over, and crimp edges to seal.
  5. Whisk an egg and brush the tops of the pastries to create a shiny finish.
  6. Bake the pastries for 20-25 minutes until puffed and golden brown. Watch closely for perfect color.
