Step-by-Step Instructions for Light Mediterranean Couscous Salad
  1. In a medium saucepan, bring 1 cup of water, a pinch of salt, and a drizzle of olive oil to a rolling boil over medium heat.
  2. Immediately stir in 1 cup of traditional Moroccan couscous, covering the saucepan with a lid. Remove it from heat and let it sit for 5 minutes.
  3. Use a fork to fluff the couscous gently and spread it on a baking sheet to cool.
  4. In a large mixing bowl, combine the cooled couscous with chopped tomatoes, diced cucumber, bell pepper, garbanzo beans, red onion, olives, and feta cheese.
